Come and join our growing team! Harvest Table Culinary Group at Salem College is seeking an energetic and forward thinking Culinary Enablement Analyst to serve the campus community.
Harvest Table Culinary Group believes that health and wellness is universal and the person in this role aids in that promise. The Culinary Enablement role uses collaborative efforts with the culinary team, guest experiences team, leadership teams, clients, and other campus organizations to enhance guest experiences.
The Culinary Analyst is a key staff support position responsible for the administration, analysis, development and communication needed to maintain culinary-related projects and programs.
Job Responsibilities
SUPPORT OF THE MASTER CULINARY DATABASE
Oversee the overall recipe development process for the Food & Beverage Development team ensuring that the database contains recipes that are sound from a culinary preparation, proper yield and proper nutritional perspective. Areas of focus to include:
- Prepare recipes for development team by completing first round editing, including:
- Confirm serving size aligns with ingredient amounts (verify all kitchen math)
- Ensure procedure adheres to style guide standards
- Confirm all cooking and holding times are properly documented
- Fully document all recipe testings
- Recipe modernization process - updating ingredients and procedures on recipe cards
- Ensure standards on all recipe collections and procedures are met, and that all culinary systems and tools are maintained, updated and presented in a format and style such that they that can be utilized by the production staff
- Utilize Recipe Writing Style Guide and Weight & Measures Reference Tools
- Verify accuracy of food cost percentages
- Trouble shooting of all recipe questions in partnership with the Registered Dietitan onsite
- Thoroughly research and provide accurate information regarding allergies and dietary restrictions for all recipes and menu items (e.g. nut allergies or vegan, gluten-free, or kosher diets).

Qualifications
Minimum 2 years experience in a similar work environment or as a culinarian in a different setting and/or relevant experience.
